Raw Vegan Lettuce Burger

Ingredients

  • 1 cup walnuts, soaked 4 hours
  • ½ cup sun-dried tomatoes
  • 3–4 tbsp flax meal
  • 2 tbsp apple cider vinegar
  • Fresh basil
  • 1 head iceberg lettuce
  • Tomato slices, red onion rings and ½ avocado, to serve
  • For the sauce: ½ cup hemp seeds, juice of 1 lemon, a splash of coconut aminos, fresh dill, 1 garlic clove, 1 medjool date, water to blend

Method

  1. Pulse the drained walnuts, sun-dried tomatoes, flax meal, vinegar and basil until the mixture holds together, adding a splash of water if it is dry.
  2. Shape into patties and chill for 30 minutes to firm up (or eat right away).
  3. Blend the sauce ingredients until creamy.
  4. Halve the lettuce and use the large outer cups, 3–4 layers thick, as the top and bottom "bun".
  5. Add a patty, tomato, onion and avocado, drizzle with sauce and close it up.

Tip: The patties stay soft. Measurements are a guide, so adjust to taste.

Great for mom because you get energy with no tired feeling after eating, and you feel less overwhelmed.
