Raw Vegan Lettuce Tacos

Ingredients

  • 5 large lettuce leaves (romaine or iceberg)
  • 1 cup baby spinach
  • 3 roma tomatoes, sliced
  • 2 carrots, shredded
  • ½ cup corn
  • ½ cup red onion, thinly sliced
  • ¼ avocado, sliced
  • 1 lime
  • Raw walnut meat (see notes)

Method

  1. Slice the tomatoes and avocado, thinly slice the red onion and shred the carrots.
  2. Lay the lettuce leaves flat on a board or plate.
  3. Fill each leaf with spinach and a spoonful of walnut meat, then add the tomato, carrot, corn, onion and avocado.
  4. Squeeze the lime over the top, season to taste, fold and eat.

Tip: Raw walnut meat: pulse soaked walnuts with a few mushrooms, a little onion, cilantro, thyme, paprika, cumin, a pinch of cayenne and salt until crumbly.
